~First Time Addiction~ [Oat Muffin with White Chocolate]

Happy first of September!

Do you still remember your first love? First day school? First day trying to drive by yourself? While it’s not always end up as a good experience, they have this special ‘butterfly in your stomach’ effect which sometimes can be very addictive. When my life becoming more stable and stalled, sometimes I wish that I could feel that butterfly again and again. But the problem is that I am not a very outdoor adventurous person (so I will never bungee jump in Africa) and I am in a full committed relationship (to fall in love with another person is very out of the plan).

What can I do to feed my butterfly effect thirst?

My plan is to visit my best friend in Jena, Germany. Alone. In a bus trip. It’s probably not very special for people who did a lot of backpacking and have an independent personality, but for me it’s quite a big deal. Normally I travel with train (which is more comfortable) or my boyfriend’s car (he drive, I sleep). But with buses I will not be able to read during the long trip (due to my motion sickness) and there will be transfers between buses in Bremen and Hannover. I am not very familiar with those cities so I hope I will not get lost finding the bus stop. Despite of my unnecessary worries, I am very excited for this trip. Butterfly #1 get!

Last weekend I bought a cupcake/muffin mold. I always wanted to bake muffins, but somehow the plan was cancelled all the time. This time while I hung out in an old people shopping center in my city, I finally remembered to buy a muffin mold. Right away I googled a very simple muffin recipe (this one: http://m.allrecipes.com/recipe/22458/easy-oatmeal-muffins), and voila! My late night muffin business has never been more successful than this. Butterfly #2 get! and I put the altered recipe right after this nonsense part is over 😉

Apart from the big new things, I also found new addiction for cherry tomatoes and Tuc mozzarella cheese/tomato. When I was little it was impossible for me to eat tomato. But here in Netherlands I fell in love with cherry tomatoes. They are beautifully red and shiny, and the taste… it’s an unbelievably sweet/sour/refreshing combination. I think I can lose some weight with cherry tomato diet + a lot of mandarin oranges. As for Tuc, no matter how much I am addicted to it, I will try to restrain myself from having too much of it. For cherry tomatoes and Tuc: small butterflies!

Now is the time for the muffin recipe. I chose oat muffin because it’s high in fiber so it’s good for your digestive system (or so I heard) and it will be a filling/nutritious breakfast in the morning. If you are not a morning person and you think that making breakfast in the morning is too much work, you definitely have to try this recipe. Make it in the evening before (in my case at 23:30), and you will have a nice muffin to munch the next day (even if you wake up late and have to run to work).

Oat muffin with white chocolate

Ingredients

– 120 ml milk

– 40 g oat (but I used the mixture of muesli and black raisin)

– 30 g butter

– 1 egg

– 60 g all-purpose flour

– 25 g palm sugar

– 20 g easy to melt white chocolate

– 3 g baking powder

– 2 g salt

How to bake

– Preheat the oven to 220 degree Celsius.

– Soak the oat/muesli in milk for 15 minutes. While waiting for the oat to be softened, melt butter in a small saucepan/microwave and weigh the rest of the ingredients.

– In a bowl, beat together the egg and the melted butter then stir in the oatmeal mixture. Mix together.

– Sift in the mixture of flour-palm sugar-baking powder-salt into the mixture. Fold carefully until they just combined. Add the crushed white chocolate in the last-minute and slightly distribute it in the batter.

– Spoon this batter into the muffin cup. 2/3 filled per cup.

– Bake for 20 minutes or until a toothpick inserted into the center of muffins comes out clean.

– Cool it down (on a baking rack or just put it by your open window), and enjoy!

Done! But they are not ready to eat yet.. must wait for them to cooled down, otherwise it will be hard to peel of the baking paper. Patience is the key of successful eating. No pain no gain. Whatever, I will wait.

 Next morning: Breakfast in bed! The muffin turned out pretty good. It’s the sticky textured muffin as how I like it so I’m very happy about it. The sweetness is perfect. You can even still serve it with sweet sauce or jam or ice cream if you like. 

What I like the most about this recipe is that I did not make too much dirty dishes. In total there were 1 bowl, 1 weighing bowl, 1 spoon, 1 fork, and 1 spatula to be washed after. Not bad at all 😉
